Vegetable cutlet

Vegetable cutlet is a snack made with boiled vegetable. It tastes great when we serve them hot with tomato ketchup or green chutney.

Ingredients and measurements Used

  • 1/2 cup -Chopped carrots
  • 1 cup -Chopped potatoes
  • 1/4 cup -Fresh peas
  • 1/4 cup-Chopped onions(optional)
  • 1/2 inch -Ginger(made to paste)
  • 2 nos-Green chilies(made to paste)
  • 1/2 tsp-Crushed black pepper
  • 1/2 tsp-Cumin powder
  • 1/2 tsp-Garam masala powder
  • 1 cup-Bread Crumbs
  • 1/4 cup-All purpose powder
  • Water as required
  • Salt as required
  • Oil for deep frying

Method

  1. Boil potato ,carrot and peas very well in a pressure cooker.
  2. Mash all the cooked vegetables using a fork in a large bowl.
  3. Now add Ginger and Chili paste,cumin powder,pepper powder,garam masala powder and salt and mix well.
  4. Take another bowl mix all purpose flour with required water to get a smooth paste.
  5. This mixture should be without any lumbs. Keep it aside.
  6. Now take a lemon sized ball  from the vegetable mixture and press it with your palm and shape it to a medium sized round cutlet.
  7. You can also use cutlet mold if you have one.
  8. Repeat this for all the mixture and keep them in a plate.
  9. Now heat oil in a pan.
  10. When the oil is hot ,take each cutlet and dip in the all purpose flour paste gently to coat all over the cutlet and coat it with bread crumbs all over evenly.
  11. Dust the excess bread crumbs and place them in the hot oil.
  12. Fry them until it becomes golden brown color.
  13. Take them out and drain it with kitchen towels.
  14. Transfer it to a serving  plate.
  15. Enjoy the cutlets hot with tomato ketch up or green chutney.
