Puttu

Puttu(Steamed Rice cake)


Puttu is a popular Kerala Breakfast cuisine.Generally served with Kadala(Bengal Gram/Brown chickpeas) Curry.You can make it with store brought puttu powder or coarse grind rice flour.You can make it with puttu maker .If you don't have it use normal steamer but it wont give the correct structure.

Ingredients and Measurements Used
    • Coarse ground rice flour(1 cup)
    • Water  1/2 cup (as required)
    • salt  1/2 tsp(according to taste)
    • Grated coconut (1 cup)
    Required
    • Puttu maker 
      coconut shell shaped puttu maker
      cylindrical tube shaped puttu maker with pot
    • wide bowl
    Preparation
    Take rice flour in a wide bowl.Add salt and mix well.After that add 1/4 th cup of grated coconut and mix it again .Now sprinkle water little by little and mix with your hands.How much water needed varies on the texture of the rice powder using.
                           Sprinkle water and mix until it reach the consistency of a wet beach sand.When you hold the mix in your fist it should form the shape and when you press it again it should crumble.That is the right consistency.
                           Mix it until the flour becomes crumbly and moist.There should not be any lumps.
    Making Puttu
    Take Puttu maker.It has two parts .The lower one is a pot where we fill water.The other part is the top part where we fill prepared puttu flour .The top part can be in cylindrical tube shape or round shape(like half of a coconut shell).
                       To fill the Puttu flour in puttu maker layer it first with a little grated coconut the some prepared puttu flour .Then again little grated coconut followed by puttu flour .Repeat the process untill the mould is full finish it with grated coconut.
                      Now fill the puttu pot with water, cover the cylindrical tube with lid and fix it on the pot. Keep it on high flame. Once the water start boiling in the pot, you will see steam escaping from the holes on top of  the top part, reduce the flame and cook for another 5-6 minutes.
                                   When you get a nice flavor of steamed puttu, switch off, remove the top part from the pot, open it and gently push the puttu to a plate using a wooden ladle.

    Serve hot with kadala curry or payaru and pappadam or small yellow banana and sugar.
