Microwave Mug/Ramekin Chocolate Cake(Egg Less)


  This easy chocolate cake recipe is made from simple ingredients.It only take 3-5 minutes to prepare and 3 minutes to bake(in 850 watt microwave oven).

    Ingredients & Measurements Used
    •  3 tbsp powdered sugar
       
    •  3 tbsp all purpose flour  
    •  1 tbsp coco powder(unsweetened)
    • 3 tbsp melted butter or vegetable oil
    • 1/2 tsp baking powder
    • a pinch salt
    • a pinch baking soda(optional)
    • 5 tbsp milk or lukewarm water
       
    Required

        2-3 Ramekins or Mugs


    Method
    1. Mix  all the dry ingredients(All purpose flour,coco powder,sugar,baking powder,baking soda,salt) together in a bowl  .
    2. Now sift them using a sifter or sieve.It helps the ingredients to in cooperate together
    3. Add the melted butter and milk and stir everything to a smooth consistency.
    4. Divide the mixture evenly among the 3 ramekins. Remember to give enough room  for the cake to raise.(You can also add some chocolate chips or nuts into the Ramekins )
    5. Microwave it for 3 mins or until a skewer inserted into the center of a cake comes out clean. 
    6. Easy Microwave cake is Ready! 

    Boondi Laddu

     Boondi Laddu



    Boondi Laddu is a very popular and tasty sweet dish made with Gram flour and sugar syrup.

      Ingredients & Measurements Used
      •  2 cup sugar
         
      •  11/2 cup water  
      •  1 cup Gram flour/Besan
      • 1/4 cup semolina
      • 1 cup oil(Vegetable/Sunflower Oil)or ghee for frying the boondi
         
      Required

          1 pan

      1 boondi ladle or perforated ladle


      Method

      To make Boondi
      1. Firstly,mix gram flour and semolina together in a bowl  .
      2. Then add 3/4 cup of water into it and make a batter with pouring consistency.
      3. Now heat the oil in a deep pan and take the boondi ladle and pour the batter through it slowly.Now it  rises to round shaped droplets called boondi.
      4. Fry it for 30-40 seconds and remove it from oil.
      5. Repeat this process until all the batter finished.
      To make Sugar syrup
      1.  Take sugar in a pan and mix with 3/4 cup of water.
      2.  Now boil it until sugar fully dissolve in water.
      3. Turn off the flame and keep it warm and add the prepared boondis into it and mix well.
      4. Keep it aside until the boondis absorb all the syrup and bulge.


      To make Laddu

      1. Greece hands with some ghee or oil .
      2. Then take a handful of boondis and make balls. 
      3. If you like mix it with raisins and nuts before making the balls.
      4. Laddus are ready................

      Egg curry with coconut milk

      Egg curry with coconut milk


      This curry is good when it  served with appam, chapathi, idiyappam ,puttu etc.It can be used with steamed rice as well.This recipe is  very easy to make.

      Ingredients and Measurements Used
        • 3 Eggs(cooked and peeled )
        • 4-5-Green chilies(Sliced)
        • 1 inch-Ginger(Cut into small cubes)
        • 2 cup- Coconut milk(1 1/2 cup thin Coconut milk and 1/2 cup thick Coconut milk)
        • 10-Curry leaves
        • 1/2 tsp-Turmeric powder
        • 2 tsp-Coriander powder
        • 1no- Onion
        • 1no-Tomato(cut into small cubes)
        • 2 tsp- Coconut oil
        • Salt as required
        Method
        1. Boil Eggs and keep it aside.
        2. In a pan or mud pot ,heat oil and add green chilies,ginger ,curry leaves and sliced onions and saute until onions turn light brown.
        3. Now add turmeric powder and saute for 30 seconds .
        4. Then add coriander powder and saute for 15 seconds.
        5. After that add the chopped tomatoes and mix well.
        6. Cover the pan until the tomatoes are done. 
        7. Then add the thin coconut milk and simmer it for 4-5 minutes until it reduced to 1/3 of it's volume.
        8. Now mix the curry with thick coconut milk and eggs and turn off the flame as soon as it boils.
        9. Top it up with some curry leaves and transfer the curry to a serving bowl.
        10. Yummy egg curry is ready!



        Egg Fried Rice

        Egg Fried Rice


        This egg fried rice is an easy dish to make. It's also very delicious!

        Ingredients and Measurements 


        • 10 or 12 nos - Beans


        • 2 nos- Carrots
        • 1no-Capsicum(any colour)
        • 1no-Onion(Optional)
        • 3-4 Cloves- Garlic 
        • 1/2 inch- Ginger
        • 3 or 4 nos-Green chilies

        • 3 tsp-oil(Vegetable Oil)
        • 1 Spring Onion
        • Salt as required
        • 2-3 Eggs
        • 2 cups-Cooked rice
        • 3 tsp Soy sauce

        Method


        1. Cut beans,carrots,capsicum and onion  into small cubes.
        2. Chop green chilies,ginger and garlic into small pieces and crush them along with 1 tsp of soy sauce and 1 tsp of oil in a mixer and keep it aside.
        3. Now heat a big wok(at least 24 cm) and add 1 tsp oil into it .
        4. Crack and pour the eggs into it and mix well .
        5. Add a little bit salt into it and scramble until it's done.
        6. After that move it from wok and keep it aside in a plate.
        7. Add oil and when the oil is hot add the cut vegetables and saute for 2 or 3 minute until it's cooked.
        8. Now add the crushed mix into this and give it a stir using a spatula.
        9. Let it cook until the paste loses it's raw smell .Add the salt as required.But be careful ,because soy sauce already have salt in it.
        10. Then add the cooked rice ,scrambled egg and remaining soy sauce and mix well.
        11. Let it cook for 2-3 minutes and turn off the flame.
        12. Sprinkle some chopped spring onion on top and egg fried rice is ready to serve.
