Parippu(Daal) Vada/Lentil Fritters

Parippu Vada/Lentil Fritters



This is a very popular south Indian evening snack. It is a simple and easy to make snack.This is a great accompaniment to tea!


    Ingredients & Measurements Used

    • 1/2 cup Peas daal
    • 1/4 cup Chana daal
    • 1 onion /9-10 small onion
    • 3 green chllies
    • 1/2 inch ginger
    • 1 strand curry leaf
    • 7-8 Dried Red chllies
    • 1/2 tsp asafoetida powder
    • salt 
    • Coconut oil (for frying)
    Method

    1.  Soak the Peas daal and Chana daal together for at least 2 hours.
    2. After that drained it well and keep it aside.
    3. Crush the onion,green chilies,ginger ,curry leaves and red chilies in a food processor.
    4. Keep the mixture in a bowl.
    5. Now grind the soaked and drained daal in a blender or food processor into a coarse paste.Try not to add any water .
    6. Mix the daal paste with the crushed spices.
    7. Now add the asafoetida powder and salt into the paste and mix well.
    8. Mixture for vadas are ready.

    9. Prepare an aluminium foil or baking paper sheet to keep the vadas before frying.
    10. Now wet your hand with some water and take a small lemon size daal mixture and make a ball ,and put it in the middle of the palm and gently press with the other palm.
    11. Then gently transfer the vada from the palm to  an aluminum foil or baking paper.
    12. Repeat this for all  daal mixture.
    13. Now heat a pan with some oil.
    14. When the oil becomes hot,gently transfer the vadas with a spatula to the pan and fry until it becomes golden brown in color.
    15. Try to keep the heat slow while frying.
    16. Yummy and Spicy Parippu vadas are ready!

    Chocolate Brownie

    Chocolate Brownie

      This is a really easy recipe for making chocolate brownies. It tastes good !!!

      Ingredients & Measurements Used
      •  1 1/2 cup powdered sugar
         
      •  1/2 cup all purpose flour  
      •  1 cup coco powder(unsweetened)
      • 10 tbsp melted butter or 12 tbsp vegetable oil
      • 2 eggs
      • 1 tsp vanilla essence
      • 1/2 tsp salt (If you are taking salted butter no need to add extra salt)    

      Required

          8" cake tin



      Method
      1. Preheat the oven to 160 degree Celsius for 5 minutes .
      2. Mix  all the dry ingredients(all purpose flour,coco powder,sugar,salt) together in a bowl  .
      3. Now sift them using a sifter or sieve.It helps the ingredients to in cooperate together!
      4. Add the melted butter,vanilla essence and mix well.
      5. Now add the two eggs and blend it with the mixture with a spatula.
      6. Line the cake tin with an aluminium foil.
      7. Now Transfer the mixture into the cake tin.
      8. Tap the tin and level the top.
      9. After that bake it for 50 minutes in 160 degree Celsius. 
      10. Then Cool it and cut into desired shape.
      11. Dust it with some powdered Sugar.Yummy Brownies are ready! 
      * We are not using any baking powder in this recipe!!!
      *Brownies should be crisp on the outside and soft and fudgy on the inside !!!

      Gobi/Cauliflower Manchurian

      Gobi/Cauliflower Manchurian

               It is an Indian Chinese fried cauliflower recipe .We can make it with or without gravy.With gravy we can have it  as a side dish for fried rice or roti etc.Without gravy we can have it  as an appetizer.

      Ingredients and Measurements 

      To make the batter for floret marination
      • 4 tbsp all purpose Flour

      • 4 tbsp corn flour
      • 1 tbsp Rice flour
      • 4 tbsp soy sauce
      • 1/2-1 tsp pepper powder 
      • salt as required
      To make the Manchurian
      • 3-4 Cloves- Garlic 
      • 1/2 inch- Ginger
      • 3 or 4 nos-Green chilies
      • Vegetable Oil 
      • 1 or 2 Spring Onion
      • 2 Onions
      • 1 Capsicum
      • 3 tbsp Soy sauce
      • 2 tbsp Tomato ketchup
      • 1 tbsp Sweet chilly sauce
      • 2 cup Lukewarm water
      • 1 tsp Corn flour
      • salt as required

      Method

      1. Clean the cauliflower and cut into small florets.
      2. Mix all purpose flour,rice flour,corn flour,pepper powder,soy sauce with some water to make a smooth batter.Add salt if required.
      3. Mix the prepared florets with the batter and keep it in fridge for at least 30 minutes.
      4. Now Chop the spring onion,ginger,garlic ,green chilies and 1 onion into small pieces.Keep some spring onions for garnishing.
      5. Cut the capsicum and 1 onion into big cubes and keep it aside.
      6. Now heat oil in a pan and fry the florets batch by batch .
      7. Keep the prepared florets aside .
      8. Now heat a wok with 1 tbsp oil in it.
      9. Add the chopped garlic,ginger,green chilies and spring onion into it and saute well.
      10. Now add the chopped onion and saute until it's done.
      11. Then add the sauces and mix well for 30 sec.
      12. Now add the lukewarm water and let it boil.Check for salt and add if required.
      13. Then mix 1 tsp of corn flour with some water and add that paste into the pan and mix well.
      14. Let it cook for 2 minutes.Keep it mixing with spoon  all the time.
      15. Lower the flame when the gravy gets desired consistency. 
      16. Now add the fried florets and mix well.All the florets should cover with the gravy.
      17. After that add the capsicum and onion cubes and mix well .Then turn off the flame.
      18. Sprinkle some spring onion on top.
      19. Cauliflower manchurian is ready!

      Semiya/Vermiceli Upma

      Semiya/Vermiceli  Upma



      Upma is a traditional south Indian breakfast dish.Usually it's made with Rava/Semolina. But we can make upma with Vermceli as well.It is a very easy and tasty recipe.

      Ingredients and Measurements 

      • 2 cup Semiya/Vermiceli
      • 5 or 8 nos - Beans


      • 1 no- Carrot
      • Some Curry Leaves
      • 1no-Onion
      • 2 cups lukewarm water 
      • 1/2 inch- Ginger
      • 2 nos-Green chilies(Optional)

      • 3 tsp-oil(Any Oil)

      • Salt as required
      • 1 tsp mustard seeds
      • 1 tsp urad daal
      • 1 or 2 dried red chilli
      • some cashew nuts(optional)
      Method


      1. Cut beans,carrots,onion and ginger into small pieces.
      2. Now take a pan and roast the vermiceli with some oil for 1 minute and keep it aside.
      3. Now heat a wok  or pan and add 1 tsp oil into it .
      4. Splutter the mustard seeds and add urad daal and dried red chili into it and saute well .
      5. Add curry leaves,onion and ginger into it and saute  until onion is done.
      6. After that add the cut vegetables(Beans and carrot)into it and mix well.Also add cashew nuts and some salt.Saute it until the vegetables are done.
      7. After that add 2 cups of  lukewarm water and let it boil.

      8. Now add the roasted vermicelli and mix well .Wait until the water starts to evaporate.
      9. Then cover it and cook for about 2 minutes.
      10. Yummy and tasty vermiceli/semiya upma is ready to serve!.
