Pumpkin Sweet with Coconut Milk and Jaggery


Payasam is a delicious South Asian desert.It is an essential sweet dish for all celebrations.This desert is usually made with rice or vermicelli and milk,or with lentils or fruits and coconut milk and sweetened with jaggery or sugar.


          Here I am making this payasam with pumpkin,coconut milk and jaggery.


Ingredients and Measurements Used
    • 1 pumpkin 
    • 125 gms Jaggery
    • 2 cup- Coconut milk(1 1/2 cup thin Coconut milk and 1/2 cup thick Coconut milk)
    • 1 tsp roasted cumin powder
    • 1 tsp dried ginger powder

    • 1/4 cup coconut pieces
    • 12-14 cashew nuts

    • 1/4 cup sultanas
    • 1 tsp- ghee/butter/oil
    • Salt  a pinch
    Method
    1. Clean and cut the pumpkin into pieces and cook it with required water.
    2. Mash the cooked pumpkin.

    3. Melt the jaggery with 1/2 cup water.
    4. Now add the mashed pumpkin into the melted jaggery.
    5. Mix well  in regular intervals and cook it in low flame until the mixture becomes thick.
    6. Now add the coconut milk and mix well
    7. Cook it for few more minutes in low flame until the payasam gets desired thickness.
    8. Now add the powders  and mix well.
    9. Payasam is almost ready.
    10. For seasoning,heat a pan and add ghee/butter/oil .
    11. First roast coconut pieces .
    12. Then add cashew nuts and sultanas into it and roast .
    13. Season the payasam with this and mix well.


    14. Yummy Pumpkin Payasam is now ready!Serve it hot or cold .

    Pepper/Chili Fritter(Mulaku Bhaji)



                           It is an easy  recipe.We can make it with 3-4 ingredients and within short time.We can also make raw plantain bhaji(Fritter) same way. 

    Ingredients and Measurements Needed


    • 3-4 nos Chilli(Big and less spicy Chilli )
    • 1 cup chick peas powder

    • 1/4 th tsp asafoetida powder
    • 1/4 tsp chilli powder

    • a pinch of baking powder
    • salt as required
    • 3/4 to 1 cup water
    • oil for deep fry

    Method

    1. Clean and remove the seeds from the chilies .
    2. Now add the chilli powder,asafoetida powder ,baking powder and salt into the chick peas powder and mix them.
    3. Then add water little by little to the mixture and make a batter.
       
    4. Heat a deep pan and add oil into it.
    5. When the oil is hot ,dip the chilli into the batter .


    6. Deep fry it in the hot oil.

    7. Flip it to other side and fry .
    8. When both sides are cooked well take it out from the oil.

    9. Keep it in a kitchen tissue or strainer to remove any excess oil.
    10. Mulaku Bhaji/Chilli fritter is ready.

    Egg Puffs

    Egg Puffs



                           We can make this delicious recipe easily . It is a very good evening snack.

    Ingredients and Measurements Needed


    • 3 -4 nos- Eggs
    • 1 Onion 

    • 1-2 Green chilies(optional)
    • Ginger 
    • 2 tsp oil
    • salt as required
    • 1/2 tsp turmeric powder
    • 1 tsp coriander powder
    • Puff pastry(ready made)

    Method

    1. Boil the eggs .
    2. Remove the shell and cut it into half  and sprinkle some crushed pepper on top of it and keep it aside.


    3. Clean and slice the onion and cut ginger and green chilies into small pieces.
    4. Now heat a pan and add oil into it.

    5. When the oil is hot ,add the cut onions ,ginger and green chilies .

    6. Add some salt.
    7. Mix well and saute until the onions are transparent.
    8. Add turmeric powder roast for 2 minutes
    9. Add coriander powder roast for 1 minute.(Always keep the flame in simmer/low while adding dry masala powders)
    10. Cook for 2 more minutes and masala for our egg puffs are ready. 

    11. Turn off the flame and keep it aside as well.
    12. Now cut the  puff pastry sheet  into four pieces(or as desirable)
    13. Then take a spoonful of masala and put in the middle of the each puff pastry sheet.
    14. Now place the half egg piece on top the masala.
    15. After that fold the sheets as shown in the picture.

    16. Do this for all the egg pieces.
    17. I got 8 nos puffs with this amount of ingredients.
    18. Now take a baking tray and arrange the puffs in it.
    19. Beat 1 egg to make egg wash.
    20. Brush the puffs with egg wash(This will give a shining to our puffs)

    21. Pre heat the oven for 5 minute at 150 degree Celsius.
    22. Bake the puffs in the oven for 20 minutes at 150 degree Celsius until the top of it turns golden brown.
    23. Check after 10 minutes.
    24. After 15 minutes
    25. After 20 minutes.
    26. Easy and Yummy egg puffs are ready.
    27. Let it cool and then serve .
