Daal and Okra Curry(Parippu and Vendakka Curry)


       This is a very simple curry.It is  good accompaniment with  steamed rice.The consistency of this dish is medium thick .

    Ingredients & Measurements Used
    •  4 or 5 Okras
       
    •  1/4 cup Toor daal  
    •  1/4 tsp Turmeric powder 
    • 1/4 tsp Red chili powder
    •  Salt to taste
    • 1 1/2 cup water
    • 1/2 cup Grated Coconut
       
    • 1/2 tsp Cumin Seeds  

    For seasoning
    • 2-3 Dry Red Chilies 
    • 6-7 Curry leaves  
    • 1 tsp Mustard seeds
       
    • 1 tsp Coconut Oil
    Method
    1. Cut okras into pieces.
    2. Heat little oil in a pan and shallow fry the okras.(If wanted ,can add some salt into this)
    3. Keep aside the fried okras. 
       
    4. Now wash the daal.
    5. Then pressure cook the daal with some turmeric powder,salt and water.(usually it takes 5-10 minutes).

    6. Meanwhile grind the grated coconut,cumin seeds ,turmeric powder and chilli powder with some water to  smooth paste .

    7.  Now add this  coconut paste and fried okras and some lukewarm water  into the cooked daal and mix well .

    8. Cook for another 3-4 minutes.Stir it in regular intervals, otherwise it may get burn.
    9. Now switch off the flame,Curry is ready!
    10.  Heat a tsp of oil in a pan , add mustard seeds, when it starts to splutter, add dry red chilies and curry leaves and saute for 10 seconds.
    11. Pour this tempering over the curry and  mix well.
    12. Transfer the prepared curry into a serving bowl!

    Ivy guard Stir fry/Kovakka Mezhukkupuratti



                This is a very yummy stir fry recipe. This is very common  dish in south India and  is usually eaten with steamed rice.

    Ingredients and Measurements Needed


    • 1/2 kilo- Ivy Guards
    • 1/8 th of an Onion or some shallots
    • 1/2 tsp turmeric powder
    • 1/2 tsp chili powder or crushed chili
    • 2 tsp oil
    • salt required

    Method


    1. Cut ivy guards into small pieces .
    2. Chop onion or shallots into small pieces
    3. Now heat a pan and add oil into it .
    4. Then add the onions/shallots into it and saute for some time.
    5. Now add the cut Ivy guards and give it a stir.
    6. Then cover the pan and cook it for 5 minutes .
    7. Keep mixing the fry in regular intervals in these 5 minutes.
    8. Now add salt,turmeric powder and chili powder and mix well.
    9. Cook for another 2 to 3 minutes without closing the lid.
    10. Now switch off the flame and transfer it into a serving plate.
    11. Serve this dish with steamed rice.

    Bitter Guard/Pavakka Stir Fry

    Bitter guard/Pavakka Stir Fry


                This is an easy stir fry recipe. This popular dish with this healthy vegetable  is usually eaten with steamed rice.

    Ingredients and Measurements Needed

    • 1 or 2  nos- Bitter Guard
    • 1 no- Onion
    • 1/2 tsp turmeric powder
    • 1/2 tsp chili powder or crushed chili
    • 2 tsp oil
    • salt required

    Method


    1. Cut the bitter guard into small pieces .Usually we do not take the inside part of this vegetable.So before cutting remove the inside white parts and seeds.
    2. Chop onions into small pieces
    3. Now mix bitter guard,onions,turmeric powder and salt  and keep it aside for at least 10 minutes.
    4. Now heat a pan and add oil into it.
    5. When the oil is hot add bitter guard mix and give it a stir.
    6. Then cover the pan and cook it for 10-15 minutes until it's done.
    7. Keep mixing the fry in regular intervals in these 10-15 minutes.
    8. Switch off the flame and transfer it into a serving plate.
    9. Serve fry with steamed rice.
