Ishtu is usually served with appam, chapathi, idiyappam etc.It can be used with steamed rice as well.This recipe is very easy to make.
Ingredients and Measurements Used
- 3 medium -potatoes(Peeled and Cut into cubes)
- 4-5-Green chilies(Sliced)
- 1 inch-Ginger(Cut into thin Julian's)
- 2 cup- Coconut milk(1 cup thin Coconut milk and 1 cup Thick Coconut milk)
- 10-Curry leaves
- 1 cup-Water
- 1 tsp- Coconut oil
- Salt as required
- In a pan or mud pot ,add potatoes,green chilies,ginger ,curry leaves,1 cup thin coconut milk and 1 cup water
- Cover the pan and cook it until the potatoes are cooked in medium flame.
- Now add the 1 cup thick coconut milk and simmer it for 4-5 minutes.
- Turn off the flame and pour 1 tsp of coconut oil on top of the Ishtu.
- Close the lid and let it rest for 5 minutes .Ishtu is ready
- Transfer the curry into a serving bowl.
