Ishtu/Potato stew

Ishtu is usually served with appam, chapathi, idiyappam etc.It can be used with steamed rice as well.This recipe is  very easy to make.

Ingredients and Measurements Used
    • 3 medium -potatoes(Peeled and Cut into cubes)
    • 4-5-Green chilies(Sliced)
    • 1 inch-Ginger(Cut into thin Julian's)
    • 2 cup- Coconut milk(1 cup thin Coconut milk and 1 cup Thick Coconut milk)
    • 10-Curry leaves
    • 1 cup-Water
    • 1 tsp- Coconut oil
    • Salt as required
    Method
    1. In a pan or mud pot ,add potatoes,green chilies,ginger ,curry leaves,1 cup thin coconut milk and 1 cup water 
    2. Cover the pan and cook it until the potatoes are cooked in medium flame.
    3. Now add the 1 cup thick coconut milk and simmer it for 4-5 minutes.
    4. Turn off the flame and pour 1 tsp of coconut oil on top of the Ishtu.
    5. Close the lid and let it rest for 5 minutes .Ishtu is ready
    6. Transfer the curry into a serving bowl.
